Spicy Food with Wheat or Soft Hazy IPA
Chili heat usually prefers lower perceived bitterness and a little malt or wheat softness.

Heat management
Capsaicin already stimulates pain receptors. A sharply bitter West Coast IPA can feel like turning the dial up. Soft wheat or juicy hazy styles often feel kinder.
Very sweet desserts plus milk stout can work after spicy mains, but during the spicy course a lighter wheat beer may keep you tasting longer.
Hydration first
Spicy meals dehydrate attention as much as thirst. Water between bites protects both palate and pacing when alcohol is involved.
